Squid is a highly nutritious seafood, which can be served hot or cold, stir-fried, stewed or baked.
A famous Szechuan style squid dish is prepared as follows:
1. Remove membrane from out side of squid, score inside lengthwise and crosswise, then cut into diamond-shaped pieces 1 inch long.
2. Heat 3 cups oil and deep fry squid for 3 seconds over high heat until each piece curls up.
3. Saute red peppers in 3 T. oil until they turn black. Add brown peppercorn pour in seasoning sauce, (soy sauce, sugar, wine, cornstarch sesame oil) stir-fry over high heat until thick.
Place squid rolls in, mix quickly, splash with hot oil, and remove to plate. Serve immediately.
Tips on soaking dried squid--use 1 T. baking soda and 10 cups hot water to soak the 3 pieces of dried squid for 8 hours, then soak in cold water for 3 hours.
